Alcoholic fermentation and maceration in stainless steel for 7/10 days. The malolactic fermentation occurs naturally in stainless steel, with the temperature increase during the summer months.

In french oak tonneaux (500 litres) for about 24/30 months

Those wines, which due to unfavourable climatic conditions do not achieve the desired characteristics, are not labelled.
